Welcome to Day 8 of my September Sweet Treats Giveaway! Today our featured Trinity Lakes Romance book is Over the Rainbow by Meredith Resce. Meredith has kindly offered a BONUS GIVEAWAY connected to her posts (see below for how to enter the Grand Prize and Meredith’s Bonus Giveaway).
Let’s talk about sweet treats we can indulge in while reading Over the Rainbow.
Today we’re visiting with Matthew and Arianne. Matthew is a personal trainer and he’s also Caleb’s younger brother (from our Day 2 post). Matthew and Arianne make sandwiches for lunch. Matthew’s preference is chicken salad sandwiches with iced tea and Arianne prefers juice.
For our sweet treat today, we’ll make a sandwich for lunch. In Australia, a typical sandwich has fillings between two slices of bread. How would you make your sandwich? Do you like toasted sandwiches or would you prefer your sandwich fillings on a roll (sub)? Would you choose a chicken salad sandwich or a different lunch option?
Here’s the book description for Matthew and Arianne’s romance story in OVER THE RAINBOW:
What a difference a year makes.
Last year, Arianne Rayne was playing college basketball and looking forward to a permanent future with her boyfriend.
This year, she is learning to live with disability.
After walking away from an accident he’d caused by reckless driving, her boyfriend walked away from her. The uncertainty of how life would look now that she had lost mobility was enough for him to break the relationship, and her heart.
Coming to Trinity Lakes to live with her stable, unflappable grandparents is hope for a new beginning and a chance to heal her heart. Away from her parents’ cloistered, cotton-wool approach, she hopes to learn how to live independently with the help of physiotherapist and trainers at the local gym.
Until she meets Matthew Kennedy. He might be buff and good looking, but he has no idea about how to relate to someone living with disability. He’s eligible, and he is certainly accessible, given he is one of her personal trainers, but will he ever see beyond her wheelchair? Arianne’s heart tells her it’s unlikely.
Until she is stranded, and Matthew is her only hope of getting home.
An enemies to lovers, small town, contemporary Christian romance.
Visit Trinity Lakes and meet the fun and quirky characters who value family, faith, and happily-ever-after.
Trinity Lakes Romance series can be read as standalone Christian contemporary romances. For a richer reading experience, and the opportunity to learn more about the characters who appear in multiple books, I’d recommend reading the series in order. The ebooks are available for your reading pleasure in Kindle Unlimited.

I stick to vegemite sandwiches but if I can have toasted I will take a ham and pineapple toasted sandwich with no cheese. I get one of these when we go to Adelaide at the roadhouse in Tailem Bend they do it so nice. (looking forward to one next Tuesday)
Hi Jenny, I’m very allergic to Vegemite so I’d have a ham and pineapple (and add tomato and cheese) toasted sandwich on sourdough. That was my favourite combo to toast under the griller when I was younger. 😊
I make homemade chicken salad and my husband loves it. My favorite sandwich is a BLT…Bacon, lettuce tomato, and mayo on toasted white bread.
Meredith Resce is a new author to me, so I went looking for her books. I went to Goodreads, and I was like where has Meredith been my whole life.
Hi Audrey, BLT would work for me. Chicken salad is one of my go-to dinners. I often have chicken schnitzel with salad. I’m so glad you’ve discovered Meredith and her books! She’s published in multiple genres and her Luella Linley series is excellent. 😊
I do like toasted sandwiches.
Mary P Australia
Hi Mary its so good to see you again. I missed you when you were not commenting at Inspy and was hoping you were ok.
Hi Mary, They’re a quick and easy lunch option. 😊
I would choose a Philly Cheese steak sandwich.
Hi Debra, That sounds good to me. 😊
I love chicken salad sandwiches. I just have them on plain bread easy & simple.
Joannie S., U.S.A.

Chicken salad is so good! I’m glad I learned to like it. Also, sometimes I just get a craving for a good ol’ peanutbutter and jelly sandwich. 😀
Hi Elizabeth, I’ve never tried peanut butter and jelly together on a sandwich. I remember hearing about them when I was young – possibly from watching tv eg. Sesame Street – but it’s not something I grew up eating. Chicken salad is a favourite. 😊
As I love chicken salad on toasted bread is so yummy! SARAH T. USA
Hi Sarah, I agree. 🙂
I would have a BLT.
Amelia S. USA
Hi Amelia, BLT sounds good. 😊
I would prefer Western Chicken Salad 😉
Enjoyed this story!
Natalya L. USA
Hi Natalya, I’m glad you enjoyed Meredith’s book. Western Chicken Salad sounds interesting. 😊
I am in the mood for a grilled cheese sandwich! 🙂
Hi Colleen, Grilled cheese is always good. 😊
I like a variety of sandwiches. I like bread, sub rolls, toasted or not. I would probably eat whatever was served and definitely would want sweet iced tea to drink.
Carolyn F. USA
Hi Carolyn, If I have a sub, I usually choose salad with cheese and have it toasted. 😊
I like ham sub sandwiches with lots of veggies except onions.
Cindi K.
USA
Hi Cindi, Ham subs are good and I always like lots of veggies, too. 😊
I enjoy ham sandwiches with Miracle Whip. Debra P. USA. God bless you.
Hi Debra, I’m not familiar with Miracle Whip and I’m guessing it’s like a salad cream. 😊
I love chicken salad and make it pretty regularly, but I like it with crackers. I love wraps… usually ham with honey mustard or turkey ranch. But for a true sandwich I like meat (usually ham or turkey) & cheese & toasted.
Hi Barbara, Chicken salad with crackers would work for me. Toasted ham, cheese and tomato sandwich is one of my favourites. 😊
I love making toasted sandwiches with some sort chicken and salad.
Madi S. Australia
Hi Madi, I love toasted sandwiches. 😊
toasted tuna sandwich

Sounds good. 😊
I enjoy a good chicken salad sandwich, sliced turkey would be my other choice, on some nive whole wheat bread. I don’t normally toast my sandwiches.
Patty R.
USA
Hi Patty, that sounds good. I’d probably go for ham over turkey on sourdough rye. 😊
I love cheesesteaks! If it’s a cold sandwich, I like a good sourdough with lots of deli meat and cheeses. Judith M. United States
Hi Judith, That would work for me. When I was at high school and worked weekends in a Deli, the main perk was being able to make our own free lunch to have on our lunch break. That’s when I discovered my love for a wide range of deli meats and cheeses that I’d mix and match on a crusty French bread roll. 😊
I would have a lightly toasted tuna sandwich with pickles. A nice glass of iced tea sounds so refreshing! -Kai B., USA
Hi Kai, That sounds good. My cat would also be wanting a little bit of tuna. 😊
If I’m having a sandwich on regular bread, I like chicken salad or egg salad. If I’m having a sub, I like ham and cheese with all the fixin’s!
Katie R. USA
I do like chicken salad sandwiches and iced tea. Bridgette S. USA
